| Description: | En este trabajo se analiza la relevancia que ha tenido recientemente la producción
y consumo de huevo para plato en México. Este producto, fuente importante de proteína de origen animal, ha venido ganando una mayor participación en la dieta de la población mexicana, principalmente por el crecimiento de la población y la pérdida de poder adquisitivo de ésta. El proceso productivo se ha caracterizado por una fuerte concentración empresarial y regional con una alta mecanización de la producción. De hecho, el consumo llegó a alrededor de un huevo diario per cápita en 2011. La tendencia es hacia un mayor consumo desplazando a otras fuentes de proteína animal (carne de bovino y cerdo) debido al aumento poblacional y al continuado deterioro del poder adquisitivo de los trabajadores. In this paper the relevance recently had the production and consumption of table eggs in Mexico is analyzed. This product, a major source of animal protein, has been gaining a greater share of the diet of the Mexican population, mainly due to population growth and the loss of purchasing power of it. The production process has been characterized by a strong entrepreneurial and regional concentration with high mechanization of production. In fact, consumption reached about an egg a day per capita in 2011. The trend is moving towards increased use of other sources of animal protein (beef and pork) from population growth and the continued deterioration of the purchasing power of workers. |
